Sausage Stuffed Mushrooms

When we were in Phoenix for Thanksgiving, my sister made these stuffed mushrooms for an appetizer and I absolutely loved them. It was just a matter of time before I found the perfect occasion to make them myself. I decided to give it a go on Christmas day and served them as an appetizer. They’d also be a great side dish.

As you can see from the photo I super stuffed these mushrooms, stacking extra filling on top. I still wound up with some extra stuffing despite this and they were not the most photogenic or pretty as they could have been, but I figured more stuffing > pretty mushrooms. After later conversing with my sister, she suggested having some extra mushroom caps handy to stuff, as it will be inevitable to have extra stuffing. Good to know!   Continue reading

Caesar Salad

For Christmas eve Greg and I were asked to bring a salad and veggie option to our family party. I thought it over and decided to make a homemade caesar salad, with fresh made dressing and croutons. Homemade dressings make such a difference. You can taste each ingredient and they are just far superior to any bottled dressing you find in the grocery store. Making caesar dressing was easy and and the outcome was delicious!

Greg got a loaf of bread from Mancini’s- tomato basil bread to be exact- and I made croutons with it. I don’t see any pictures of them on my camera so I guess I forgot to snap a few. Croutons are easy to make. I cut the bread into small cubes and placed them on a lined baking sheet. I brushed the pieces of bread with olive oil and baked them at 350 degrees for about 8-10 minutes. Keep an eye on them so they don’t burn.

Hollandaise Steak and Eggs

Happy New Year!  This was a special breakfast for New Years Day and the day after our one year anniversary!  Good ol steak and eggs with a homemade hollandaise sauce.  It takes a lot of steps but they are pretty easy and the whole thing was a bit quicker and easier than I thought.

Christmas Pierogies

It has been a tradition for many years to make rogies on Christmas.  My mom has a recipe that has been passed down to her through family for years.  This is a typical eastern European/Pittsburgh dish that I wanted to fully learn and record.  It is a lot of work to make them if you make everything from scratch like we did but there are some corners that could be cut.  Either way, they are a great comfort and holiday food that can be eaten at anytime too.

Broiled Cod

I’ve always liked cod and this was a quick and easy preparation.  It was a good winter dish also.  Cod is not the cheapest cut, but is pretty reasonable and really tasty and flaky when cooked well.

Braised Country Ribs

This was a good indoor winter dish that sort of reminds me of summer a bit.  It was doable on a weekday in about 2 hours and well worth it.  The meat was soft and flavorful and didn’t need a lot of attention to make.

This worked out perfectly because I happen to be a huge fan of tortilla soup  and I have never made it before. So, I happily took on this challenge and made it on a very cold Sunday afternoon.

Pork and Ginger Dumplings

We were making some finger foods for guests and while dumplings are not the typical “finger food”  they were a good munchie to have out.  We kept it pretty simple with pork, ginger, and green onion.  We tried a few different cooking types as can be seen above before deciding on the best.

White Bean Hummus with Roasted Garlic

I had some leftover great northern beans in my pantry from when I made the chicken chili. I have made hummus with edamame before, so why not make it with the white beans? I remember reading a post for white bean hummus on How Sweet It Is a while back and decided to check it out. Jessica’s addition of roasted garlic seemed brilliant so I followed her recipe. The only change I made was adding lemon juice at the end.
