Curry Chicken Salad with Thyme
1 lb. cooked chicken
6 oz. plain, nonfat Greek yogurt
1 cup of light mayonnaise
1/4 cup chopped red onion
10 sprigs of fresh thyme
1 tablespoon of curry powder
1 teaspoon of tumeric
1 teaspoon of freshly ground black pepper
1 teaspoon of salt
1 teaspoon of paprika for garnish
Directions:
Chop chicken into bite size pieces and place in large mixing bowl and add chopped red onion.
Remove leaves from the thyme sprigs and add to bowl.
Add yogurt, mayonnaise and remaining spices and mix until thoroughly spread and all chicken is covered.
Sprinkle the paprika over the top.
Serve with lettuce or cabbage leaves or have it by itself!
