Pierogies

Here are the recipes and directions for all parts of made from scratch pierogies

DOUGH

3 cups Flour

1 Egg

1 cup Milk

1 tbsp melted Butter

Place the flour on the counter and make a well in the middle

Pour the milk into the well and slowly and carefully mix with the flour with hands

Make another well and add the beaten egg and continue to knead in

Knead in the melted butter and thoroughly knead until counter is clean and the dough stays together in a ball

Place aside in a bag for about a half an hour until further needed

SVATKY

2-3 tbsp Butter

large white Onion

1 lb Bacon

Melt butter in pan

Saute diced onion until translucent and wilted

Add bacon and cook until almost done and still flexible

Put entire mixture aside and use as needed for final preparation

PIEROGIE FILLING

3-4 Potatoes

3-4 tbsp Bacon Svatky grease

1/4 cup Milk

1/2 cup Svatky mixture

Boil potatoes until soft and drain

Add bacon grease and begin to mash/mix potatoes

Add milk and continue mashing

Add svatky mixture and mix until held together but still somewhat dry.  Add milk slowly as all may not be needed.  A bit extra milk may also be needed.
