Marscapone Creamed Spinach Recipe

20 ounces fresh spinach

2 Tablespoons butter

1 clove of garlic, minced

salt and pepper

1/8 teaspoon ground nutmeg

1/8 teaspoon red pepper flakes

6 ounces marscapone cheese

1/4 cup half and half or milk

1/4 cup grated parmesan

Directions:

Preheat oven to 350 degrees.

In a large pot cook spinach over medium heat until wilted.

Drain in a colander and press out any excess liquid.

Chop spinach and set aside.

In the same pot you used to cook the spinach, heat butter until melted. Cook garlic for 1 minute and add the seasonings.

Add the marscapone and stir as it melts to incorporate.

Add half and half and stir.

Add spinach and mix well.

Transfer to a baking dish and top with parmesan cheese.

Bake for 10 minutes or until bubbling.
