Balti suace:

2 tablespoons peanut or vegetable oil

2 medium yellow onions, chopped

1 tablespoons ginger, chopped

1 tablespoons garlic, chopped

1 14-ounce can chopped tomatoes

1 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon coriander

1/ teaspoon turmeric

1/4 teaspoon chili powder

pinch salt

pinch pepper

1 bay leaf

2 tablespoons peanut or vegetable oil

1 onion, chopped

2 garlic cloves, chopped

2 red bell pepper, chopped

1.5 lb. sirloin steak, thinly sliced

fresh cilantro sprigs, for garnish

Directions:

Heat oil in pan. Saute onions, ginger, and garlic. Add can of tomatoes with juices. Add all of the seasonings. Bring mixture to a boil and then simmer for 20 minutes on low.

Let the sauce cool slightly, then remove bay leaf and pour mixture into blender or food processor and blend until it becomes a smooth sauce.

Heat the remaining 2 tablespoons of oil in the original pan. Add the onion and garlic and saute for 5-8 minutes. Add bell pepper and continue cooking for 2 minutes.

Stir in the beef and cook for 2 more minutes. Add the Balti Sauce and bring to a boil. Reduce heat and simmer for 5 minutes. The sauce will reduce slightly and the peppers should be soft.

Garnish with fresh cilantro.
