Mediterranean Tilapia

Mediterranean Tilipia

1 bag of baby spinach

1/4 cup of green onions, chopped

1/4 cup of toasted pine nuts

1/2 cup of feta, crumbled

8 fillets of tilapia

1/4 cup of parmesan for “breading”

salt and pepper


Preheat oven to 400 degrees.

In a saute pan cook spinach until wilted and drain.

In a mixing bowl, mix spinach, green onions, pine nuts, feta.

Coat each fillet with parmesan.

Place 1-2 tablespoons of filling on each fillet.

Bake for 10-12 minutes or until tilapia is cooked through.

Season with salt and pepper as needed.
