Meatloaf
**Note: I make meatloaf in two styles- one with ketchup and one with beef gravy. Wherever you see ketchup in the recipe you can substitute beef gravy if that is your preference.
1 lb. of ground meat (I use a meatloaf “mix” of beef, pork, and veal)
1 egg
1 package of onion soup mix
1/4 cup of breadcrumbs
1/4 cup of ketchup**
2 tablespoons of ketchup**
Directions:
Preheat oven to 375 degrees.
In a large mixing bowl, add meat, egg, onion soup mix, breadcrumbs and ketchup**. Mix ingredients (I use my hands for this) until all ingredients are well integrated. Add more breadcrumbs if the consistency is too wet.
Use cooking spray to grease a baking dish and place meat mixture in dish, forming into a loaf shape.
Place remaining two tablespoons of ketchup** on top of the loaf and spread evenly with spatula.
Cook for about 45 minutes or until the internal temperature reaches 150 degrees.
Serve with mashed potatoes and peas.
