Simple Basil Pesto

2 cups fresh basil

1/2 cup olive oil

1/2 cup grated parmesan cheese

2 tablespoons cashews, or pine nuts, almonds, walnuts (whatever you have on hand)

2 cloves of garlic

1 hot pepper, stem removed

2 teaspoons salt

1 teaspoon freshly ground black pepper

1-2 hot peppers**

Directions: In a food processor, chop basil, salt, pepper, garlic, nuts and hot peppers**. Slowly drizzle in olive oil until consistency is what you want. Store in refrigerator or freezer until ready to use. Add cheese to pesto sauce prior to using.

** use at your discretion if you want some kick to it!
