4 bell peppers
1 lb. ground meat
1 cup shredded parmesan
1 medium yellow onion, chopped
2 cups green spinach
1 cup and 1/2 cup of tomato sauce
1/2 cup grated Parmesan
1 tablespoon olive oil
1 teaspoon red pepper flakes
1 teaspoon chopped garlic
1 teaspoon salt
1 teaspoon pepper
Directions:
Preheat oven to 350 degrees.
Brown meat, set aside in a mixing bowl.
Add shredded parmesan to bowl.
In a separate pan, heat olive oil. Once hot, add red pepper flakes and saute for 1-2 minutes. Add onions and cook until translucent. Add garlic and saute. Add spinach and cook until wilted. Add mixture to ground meat and cheese. Add 1/2 cup of tomato sauce and combine.
Shell out peppers by cutting off tops and removing seeds and white parts.
Stuff each pepper with 1/4 meat mixture.
Top with 1/4 cup tomato sauce and tablespoon of grated parmesan.
Place each pepper in a baking dish and bake for 50-60 minutes until pepper is tender.
