Pesto , 8 ounces
1 lb. shrimp, peeled and de-veined
1/2 cup shredded Parmesan cheese
1/4 cup pine nuts
1 tomato chopped
Pre-heat oven to 350 degrees.
Place peeled shrimp in a casserole or baking dish.
Top with pesto sauce and coat well.
Top with cheese and pine nuts and place in oven.
Bake for about 12-15 minutes, or until shrimp turn pink.
Tope with fresh chopped tomato and serve with pasta, if desired.
