Eileen’s Creamed Spinach
2 tablespoons of butter
1 clove of garlic, minced
1 tablespoon of onion powder
1 teaspoon of crushed red pepper
1/2 cup of half and half
1/2 cup of Parmesan
1 bag of frozen spinach, thawed and drained
salt and pepper to taste
Melt butter in a medium pot. Add garlic, onion powder, and red pepper and saute for 1-2 minutes. Add half and half and cheese. Add spinach and combine (if it is really soupy you can keep it on the burner to thicken for a few more minutes).
Parmesan in the spinach sounds nice.
