**This recipe is not exact as I did not measure every ingredient and sort of went by taste and the consistency that I was going for.

3 tbsp Chili Oil

4 tbsp Sesame oil

3 tbsp Fish Sauce

3 tbsp Soy Sauce

2 tbsp Rice Wine Vinegar

1+ tbsp chopped Garlic

1+ tbsp chopped Ginger

1/2 cup Peanut Butter

1 package Rice Stick or Asian Noodles of your choice

1/4 cup chopped Peanuts

2 cups Bean Sprouts

1/2 cup chopped Cilantro

1/2 cup chopped Thai basil

1/4 cup Green Onion

sliced Lime

1 lb Scallops

Salt and Pepper to season Scallops

Combine first 7 ingredients and saute for 3-4 minutes.  Add peanut butter and mix until melted and well blended.  Add rice stick after being prepared per directions on package.  Remove from heat and mix in sprouts.  Prepare scallops as the sauce is cooking by thoroughly drying them, sprinkling with salt and pepper and searing in oil in a pan on medium high heat.  Top noodles and sprouts with scallops and garnish with peanuts, cilantro, Thai basil, green onion, and sliced lime.
