Breakfast BLT

Serves 2

2 eggs

1 avocado, sliced

4 slices bacon, cooked

1 tomato, sliced

1/2 cup fresh spinach, wilted

1 onion roll, halved

Directions:

Toast each half of the roll and place on a plate. Place wilted spinach on top of roll, followed by two tomato slices, 1/2 of avocado, 2 slices of bacon.

Fry egg to preferred level of done-ness (I like the yoke to be runny) and place on top of open-faced sandwich.

I suggest eating these sandwiches with a fork and knife.
