3 lbs Redskin Potatoes
2 tbsp finely chopped fresh Rosemary
5 cloves finely chopped Garlic
2 small onions finely chopped
4 tbsp Butter
1/2 cup Milk
Pinch of Salt and Pepper
Directions:
Cube the potatoes and boil for about 15-20 minutes
Drain the potatoes and set aside
Return the pot to heat and melt the butter
Once melted, sweat the garlic, onion, and rosemary, salt, and pepper
Return the potatoes to the pot and add the milk
Beat with electric mixer until desired texture
