2 cooked chicken breasts, cut into 1 inch cubes
1-2 cups raw broccoli, cut into small pieces (depending on how much you want)
1 jalepeno, diced (if you like spice!)
2 tablespoons hot chili oil
2 tablespoons sesame oil
2 tablespoons rice wine vinegar
2 tablespoons soy sauce
1/2 cup peanut butter
1/2 cup chicken broth
1/4 cup peanuts, crushed for garnish
4 stalks green onion, chopped, for garnish
In a large saucepan or wok, heat oil, vinegar and soy sauce and stir. Add jalapeno now, if using. Once warm, stir in peanut butter and mix well. Use chicken broth to achieve the consistency you desire.
Bring up the heat to almost boiling and add broccoli. Stir constantly until broccoli is cooked through. Add chicken and combine.
Garnish with chopped peanuts and green onion.
