2 cups halved grape tomatoes
1/3 cup vidalia onion, minced
4 (generous) tablespoons crumbled blue cheese
1 tablespoon extra virgin olive oil
1 tablespoon wine (red or white) vinegar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
Combine tomatoes, onion and blue cheese in a small bowl.
In a separate bowl, combine last four ingredients and whisk to make dressing for salad. Pour over tomato, onion, and blue cheese mixture and serve.
