1 cup plain greek yogurt

1/2 large cucumber; peeled, seeded and finely chopped

1 tablespoon minced garlic

1 teaspoon lemon zest

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon vinegar

2 teaspoons finely minced mint

salt and pepper to taste


Mix all above ingredients. Chill.
