Italian Beef Sandwiches

We got some new toys for Christmas that we did not ask for but were very glad to receive – an electric pressure cooker and a deli slicer!  This is the first of many possibilities that these new pieces will lead to.  They both debuted on this dish which is mostly inspired by Travel channel type shows about Chicago Italian Beef Sandwiches like Al’s.  I have never been to Chicago but would love to visit and seeking out one of these sandwiches would be one of my first stops.  These toys made this a really quick and easy dish because we had the right tools!

Thyme Pork Chops with Grilled Havarti and Kale

A few things are going on here (1) squeezing in mild autumn grilling, (2) using CSA thyme and kale, and (3) grilling cheese for the first time though I have wanted to for quite a while.  I got some bone in pork chops in order to use some thyme that was nearing its end and also my mom gave me a package of havarti grilling cheese.  Throw in some CSA kale and another fall themed meal easily came together!

Bacon Cheeseburger Patties

It’s exactly what it seems like it is.  I took bacon and cooked and chopped it along with cubed extra sharp cheddar cheese and worked them into patties with some seasoning.  Simple, quick, and highly effective!

S’mores Pops

These were a great idea that Eileen got from the blog Carrots n Cake and were quick and easy and a big hit at the Labor Day BBQ that we brought them to.  These s’mores pops bring the campfire taste indoors or anywhere with less mess, but the lack of melty marshmallow and chocolate is a slight loss in the trade off.  Your hair wont smell like campfire for 3 showers though and I think that is worth it!

Spinach Stuffed Tilapia

Tilapia is always cheap when on sale or not.  Accordingly, it is not the tastiest fish but is very versatile and can be doctored up pretty easily.  This was a sauteed spinach stuffing rolled in tilapia filets that were then sprinkled with parmesan and panko before a quick bake.

Greek Oregano Chicken

We recently went to the Greek Food Festival at St. Nicks Church and were inspired to go Greek as you will see reflected in a few dishes to come.  This was simple, quick, and cheap!  Some spices and fresh oregano, roast for about an hour, and you seem like a genius!

Tomato Vodka Sauce

When I was younger and my family would go out for Italian dinners I would often get the penne or rigatoni ala vodka (aka a tomato vodka cream sauce). For some reason I forgot all about my love for this sauce until I came across a recipe for it one day as I was reading blogs. Luckily, this sauce was super easy to make and just as decadent as I remember. We served it with sausage for some added protein and spaghetti squash instead of pasta. It was divine!
