Spinach Stuffed Tilapia

Tilapia is always cheap when on sale or not.  Accordingly, it is not the tastiest fish but is very versatile and can be doctored up pretty easily.  This was a sauteed spinach stuffing rolled in tilapia filets that were then sprinkled with parmesan and panko before a quick bake.

I started by sauteing spinach with some serrano peppers, green onions from our CSA, garlic powder, salt, and pepper.  Then laid out the tilapia and sprinkled it with parmesan, salt, and pepper.

Then put a spoon of the spinach filling and rolled/folded the tilapia over the spinach and placed in a baking dish.  It was good for the fish rolls to be somewhat crowded in the pan to stay together.

With a little pad of butter for each roll

 Then top with another little sprinkle of parmesan and panko.

Then bake until the fish is white and flaky and the breadcrumbs start to brown, about 12 minutes at 425.
