This was a quick and easy soup to prepare that packed some great flavor with very few ingredients. 6 to be exact. It was also the first time I have ever cooked with leeks. I’ve been meaning to for a while and now that I have I don’t know how or why I waited so long! Leeks are like jumbo green onions, but you don’t use the dark green parts. They have an onion flavor that is nice and mild. They are really pretty too.
Saute the leeks in some butter with fresh thyme.
After about 8-10 minutes the leeks should be getting soft. At this point add the broccoli and chicken broth.
and boil for another 8-1o minutes.
Add everything to the blender and puree. I added about a quarter cup of half n half during the blending just to smooth it out a bit and round out the flavor.
Top with some reserved sauteed leeks and fresh thyme.
We also garnished ours with some cheese but that is optional. It came out great. I had it for lunch a few days later and it was even better by that time as I guess the flavors had time to come together some more. You can certainly make it in advance and let it stand in the fridge for a few days. It was a great weeknight meal!
