Thai Chicken Pizza

One of my favorite restaurants in the whole wide world used to be California Pizza Kitchen. I just loved it- I always, always got the spinach and artichoke dip appetizer and the thai chicken pizza (on honey whole wheat crust!). When I find something I like at a restaurant, I am notorious for ordering it every single time I go back and this was no exception. As I have matured and my foodie-ness has grown in epic proportions, CPK just doesn’t have the same appeal it once did. That’s ok, it happens. However, every now and then I still get a taste for this uniquely delicious pizza and being the self-proclaimed foodies that we are, I suggested we try to make it ourselves. It turned out great and I encourage you to shake things up sometime and give this recipe a try.

Kale Caesar Salad

I am so glad my taste for kale has returned, because it is such a delicious green and so healthy too! One of my favorite ways to have kale is in a cold salad, believe it or not. If I am feeling lazy, I’ll massage my torn-up kale pieces with some lemon juice, olive oil, salt/pepper and parmesan cheese. It’s quick, easy and quite tasty. Massaging the dressing into the leaves helps them wilt slightly and become much more palatable. This is a great option and all, but if I am truly inspired and have the ingredients on hand I make a fresh caesar dressing, which works perfectly with the kale and holds up to it’s bolder flavor and texture.

Fra Diavolo Sauce

I love Italian food and I love spicy and this is a great combination of the two.  I looked up Fra Diavolo and the not always wise internet says that it translates to “brother devil”.  I knew of the devil part in reference to its spiciness, but am not sure about the brother part, but sure we will go with it.  I served this over pasta with shrimp, but like many Italian sauces, once made it is very versatile and could be used in many different ways.

Alfredo Lasagna

I was going to call this a white lasagna but as you will see there are plenty of ingredients that are not white.  Alfredo sauce was involved and I called on a previous recipe (which we featured twice) of ours for that.  I won’t say that this was that difficult, but it did take a while which was well worth it because it was “one of the best things I made in a while.”  That was an actual quote from Eileen about this great dish and I think she was right!

Green Goddess Salad Dressing

Don’t you just feel healthier looking at this photo? We had some herbs leftover from various recipes and I thought I’d make a yummy, fresh green goddess dressing. I searched the internet for a recipe and it turns out there are seemingly hundreds of variations out there. I basically combined several recipes to cater to the ingredients I had and the style of dressing I was looking for.

Pumpkin Pasta Sauce with Shrimp

WAIT!  Don’t throw those pumpkins away!  This fall we have been making an effort to try some new seasonal recipes as you may have noticed, and this has got to be the pinnacle of that.  What is more fall than pumpkin!  This is similar to an Alfredo sauce with pumpkin as the main ingredient with the help of cheeses and cream.

Pork Chops with Romesco Sauce

We had pork chops on our menu the other night and I wanted to do something new to me and more exciting than my ole standby, shake n bake (which is still awesome). We had the ingredients for Romesco sauce, which I saw some other bloggers make here and here. I encouraged Greg to make it for us and he did. We enjoyed it a lot. So much so we made salad dressing with the leftover sauce, adding some plain yogurt and a little water the very next night. This was also very delicious!

Caprese with Lemon Basil Pesto

Oh, Summer… so sad to see it come to an end but luckily the produce from the summer crops are still going strong. We have been growing these lovely little tomatoes all summer and have been thoroughly enjoying them. One of our favorite ways to have them is with fresh basil and penn mac’s fresh mozzarella, extra virgin olive oil and balsamic vinegar. So simple, so good. Recently, we received some ‘lemon-basil’ in our CSA and naturally a pesto came to mind.

Buffalo……Pork Chops?

As a Foodbuzz participant (yeah, over to the right there) we receive promotions in return for trying them out and letting you know about them like the recent Godiva coffee.  This summer we received KC Masterpiece Buffalo Marinade.  I wanted to do something different than the cliche buffalo chicken and had some boneless pork chops on hand with fresh blue cheese and a nice summer grill.
