For St. Patty’s day I made an Irish beer beef stew. Originally I wanted to make stout braised short-ribs, but it turns out short-ribs were a little more pricey than I originally thought. We ended up purchasing a single bottle of Smithwick’s (an Irish red ale) and some beef shanks and enjoyed every bite.

Don’t you just feel healthier looking at this photo? We had some herbs leftover from various recipes and I thought I’d make a yummy, fresh green goddess dressing. I searched the internet for a recipe and it turns out there are seemingly hundreds of variations out there. I basically combined several recipes to cater to the ingredients I had and the style of dressing I was looking for.
It should come as no surprise to anyone by now that I am a fan of homemade salad dressings. I made this for a family dinner some time ago and have been meaning to post it forever now. It was a delicious dressing that I ended up using on a spring salad. It would also be a great marinade or you can serve it warm as a sauce as well. It’s very versatile and easy to make.
