Grilled Meatballs

Yes that heading is correct, I made grilled meatballs.  Had some ground beef and a hankering for meatballs during some pretty hot days and decided to give grilling meatballs a try.  It worked amazingly well and produced a great taste of the grill with the Italian meatball flavors which were great dressed up with some sauce and cheese.

Fajita Shrimp Caesar Salad

We have made fresh Caesar dressing before and it was a huge hit.  The one difference this time was using chopped canned anchovies instead of anchovy paste. I lightly floured and baked some shrimp and placed it atop sauteed veggies for a light and summery dinner salad.  This would also be great to serve in a large quantity at a party or dinner.

Grilled Pit Beef

I was looking to grill something a little different since I had the time on a Sunday and it can be easy to fall into ruts in all aspects of cooking.  I decided to grill pit beef for sandwiches and used a method I was unfamiliar with.  This is basically a grilled roasted beef sandwich, which I thought would be indirect heat slow cooked but instead was directly cooked over the grill in a rather short period with much close attention to the grilling.

Ginger-Miso Salad Dressing

I’ve professed my love for homemade salad dressings on numerous occasions and I have made a few recently that were particularly delicious. The picture you see above is of a seared tuna salad with ginger-miso dressing, like one you would get a good Japanese restaurant. The work involved in this dressing mostly comes in the shopping for the ingredients! Otherwise, it’s pretty much a process of prepping the ingredients and throwing them in a food processor (or blender).  It can’t get much easier and you will love the way it tastes.

Spicy Tuna and Salmon Tempura Roll

Homemade sushi!  It is not easy, but I am getting better.  We have featured most of these other rolls before with a new guest this time of spicy tuna and salmon tempura roll.  Also, this was about $12 worth of fish which shows you the mark up in restaurants, but again it is not easy and nice when someone really good and quick does it for you.  Anyway, spicy tuna and salmon tempura roll!

Pastitsio

This is the second installment of the Greek inspired recent dishes, which has always been my favorite Greek dish.  Pastitsio is often described as a Greek lasagna which is fairly accurate.  This was a combination of a few recipes as they all differed quite a bit.  Either way, it is not a beginner recipe but it seriously may have been the best thing we have ever made!  I even met a new cheese in the process.

Greek Oregano Chicken

We recently went to the Greek Food Festival at St. Nicks Church and were inspired to go Greek as you will see reflected in a few dishes to come.  This was simple, quick, and cheap!  Some spices and fresh oregano, roast for about an hour, and you seem like a genius!

Seared Tuna Stir Fry

I was trying to think of a way to diversify our meal ideas and different ways to use seared tuna.  The final decision was to marinate and sear the tuna on the grill and place it on top of stir fried veggies, both with an Asian emphasis.  Both parts of the dish were good alone and worked really well together.

Jalapeno and Bacon Mac n Cheese

If you know me or have been following, mac n cheese is one of my favorite dishes, one of the first things that I mastered, and comes up fairly often (Gruyere and Broccoli version, Fire version).  I have experimented with some different combinations and this was another, bacon and fresh jalapenos.  I also used Dreamfields low carb pasta (coupon and info here).  Check another addition to the growing mac n cheese library!

Rotisseried Corned Beef

A good thing about St. Patty’s Day, and especially March 18th and on is the surplus of corned beef and the reduced prices after the 17th.  I always get one each year and this was no different.  In recent years I have been rotissering (and making up words) the corned beef which turns out more like a lunch meat texture than a pot roast if boiled.  Served with some roasted cabbage and made a few lunches also.
