I had a pork loin and some rosemary which is a combo that I fancy and also wanted to grill it while the weather was still so mild. We also had some French breakfast radishes which I had never seen before to my knowing. I kept the pork on the upper shelf of the grill and it seared and charred well while not cooking to quickly and drying out. The radishes were sauteed and cheesed. Sticking with the fall theme, I cooked down an apple cider sauce that was used like a dipping au jus.

This is the second installment of the Greek inspired recent dishes, which has always been my favorite Greek dish. Pastitsio is often described as a Greek lasagna which is fairly accurate. This was a combination of a few recipes as they all differed quite a bit. Either way, it is not a beginner recipe but it seriously may have been the best thing we have ever made! I even met a new cheese in the process.
Thanks to my sis we now receive Bon Appetit magazine! This recipe comes from the January 2011 issue. I adapted it in a couple of ways. First, I nixed the pomegranate relish that was supposed to accompany it and secondly, I used chicken thighs instead of making kebobs with breast meat. Once it’s grilling season I would love to make this again, this time by making the kebobs. The thighs came out great though too!
OK I know what you’re thinking… another chili recipe?!@? Yeah, but this one is really really good. I’m a big chili fan and always keep my eye out for variations. This one has cinnamon and cloves in it along with more traditional chili seasonings and almost has an Indian-esque flavor to it. It also has beer in it 🙂 We both really loved this one. Really.
