Feta and Spinach Turkey Burgers with Roasted Red Pepper Mayo

Many different elements came together both in and on the burgers.  There was garlic sauteed spinach, fresh feta, and jalapenos in the burgers and a roasted red pepper mayo spread on the fresh baked buns.  We did not make the buns, but got them in the Strip District where we get most of our cooking supplies.  These were made the same night as Roasted Red Pepper Bisque and I kept a bit of the peppers aside for the mayo spread.

Tomato Vodka Sauce

When I was younger and my family would go out for Italian dinners I would often get the penne or rigatoni ala vodka (aka a tomato vodka cream sauce). For some reason I forgot all about my love for this sauce until I came across a recipe for it one day as I was reading blogs. Luckily, this sauce was super easy to make and just as decadent as I remember. We served it with sausage for some added protein and spaghetti squash instead of pasta. It was divine! No Tortilla Cheesy Chicken Enchilada Bake

What to do when you want chicken enchiladas but you don’t have any tortillas? Make this and you won’t even miss ’em! This is all the good stuff of the chicken enchiladas you know and love without all the needless filler of tortillas. You’re probably a little unsure right now about not using tortillas… which is very understandable.  I’m here to tell you that we really enjoyed this a lot and realized that the tortillas were never really that necessary after all.  Maybe you’ll agree.

Roasted Red Pepper Bisque

Sorry for the lack of posts recently.  Bizzy!  This was an end of winter soup that was pretty easy, filling, and tasty.  It is a bit time consuming but not with full attention steps throughout.  Red pepper has such a great taste and with a little extra spice added it was wonderful!

Cheeseburger Soup

I once saw a Diners, Drive Ins and Dives episode that featured a place that made cheeseburger soup and I wanted to make it really badly. Something about it sounded so good to me, but time wore on and I kind of forgot about it. Recently, I saw that one the blogs I frequent featured their own recipe for cheeseburger soup and since the recipe was right there and all I decided to go for it… and I am so happy I did! I am still thinking about it and I made it quite a while ago 🙂

Italian Wedding Soup

Amazing!  I have always loved Italian Wedding Soup but have never tried to make it.  We were turned on to this recipe by a visit to Eileen’s dad recently.  We like Lidia, and it is a recipe of hers which featured a step that I had not seen before and of course it worked out perfectly and was genius.

We have been on a roll with Bon Appetit recipes recently and this is an adaptation of one.  They have section where they recreate/figure out recipes from restaurants that readers request.  This was an adaptation of their version of Mahi-Mahi with Tomato, Pepper, and Caper Sauce from Cabana in West Palm Beach.

Super easy Sausage Dip

This super easy sausage dip was made on superbowl Sunday.  It’s taken a while to get around to posting it, still recovering.  This was a recipe from a colleague that had a well established reputation as being “addictive”.  It follows through with the promised ease and the hit of the party status.

Turkish Chicken Thighs with Tahini Yogurt

Thanks to my sis we now receive Bon Appetit magazine! This recipe comes from the January 2011 issue. I adapted it in a couple of ways. First, I nixed the pomegranate relish that was supposed to accompany it and secondly, I used chicken thighs instead of making kebobs with breast meat.  Once it’s grilling season I would love to make this again, this time by making the kebobs. The thighs came out great though too!
