Start with ground chicken. Add blue cheese that you crumble yourself from a block. I always say leave some pretty big nuggets in there. Throw in a half cup of breadcrumbs or more to hold the meatballs together.
Add buffalo sauce prepared on the stove by mixing butter and hot sauce. Let it cool a little bit because you will be handling the mixture soon.
They will run a bit from juice of the meat, sauce, and melting cheese. Let them drain on a paper towel for a quick minute and serve.
