Cheeseburger Soup

I once saw a Diners, Drive Ins and Dives episode that featured a place that made cheeseburger soup and I wanted to make it really badly. Something about it sounded so good to me, but time wore on and I kind of forgot about it. Recently, I saw that one the blogs I frequent featured their own recipe for cheeseburger soup and since the recipe was right there and all I decided to go for it… and I am so happy I did! I am still thinking about it and I made it quite a while ago 🙂

Like most things we make it all starts with some onion. We also added some jalapeno at this point to give the soup a little kick.

Next add the ground beef and cook until its browned and cooked through.

Add tomato paste and yellow mustard and stir it all together.

Next, add beef broth and some velveeta cheese. Yeah, velveeta. I wasn’t too fond of this but it’s the only way to get the soupy texture and the cheesy taste. It’s very weird to work with and takes an oddly long time to melt.

At this point, you add some shredded lettuce and chopped tomato and turn off the heat and stir.

We topped ours with some cooked bacon and chopped pickles.

This was SO good. I loved it. You won’t even miss the bun!

  1. Yum!!!!! Cheeeeseburgerrr souppppp! So glad you liked it! I agree the velveeta is rubbery and weird but really the easiest way to get that authentic American cheese taste while still remaining creamy. And didn’t you think the bacon and pickles totally were the best part? 🙂
