Zucchini Planks

We’ve been in Pittsburgh for a whole year now and we have been loving it, especially all the great food! We have created some of our Pittsburgh favorites, such as pierogies and Italian Wedding Soup, both staples of many restaurants here, and here is another dish commonly seen on menus around town- fried zucchini. We had some fresh mozzarella in the fridge and zucchini and I decided to whip this up. It took all of about 15 minutes from start to finish and was delicious!

First Try Homemade Cheese……Finger Sandwiches

I recently ordered a homemade mozzarella and ricotta making kit.  I have tried to make the mozzarella twice, and both times it has not quite worked out.  The problem is that most standard grocery store milk has been pasteurized at too high of a temperature and the enzymes have been damaged and cannot form strong enough curds.  I have just learned all of this by the way.  So when this happens, it says to use the mixture as a cheese spread which I have used here to make finger sandwiches for a recent party.  Look forward to a successful mozzarella post soon, but in the meantime….makeshift party finger sandwiches!

Chive Butter Quickpost

This is a quick post because it is very simple but worth showing.  I used fresh chives from our garden and mixed them into softened butter and sent the butter back to the fridge to be available for many uses.

Chocolate Chip Cookie Sandwiches

We and especially I never make desserts so this is a real rarity.  I love oreos and would say they are my favorite manufactured cookie so the cookie sandwich idea is a big hit with me.  I also love the ice cream cookie sandwiches that look like this.  I knew I wouldn’t be able to reconstruct oreos and am always a sucker when I see cookie sandwiches at street table bakeries like the ones they have set up in the Strip on weekends.  The cookies or icing were not too difficult to make, but I was a little slow since I don’t have much experience in baking.

Crispy Tilapia Filets with Fennel-Mint Tzatziki

I was inspired to make this after flipping through my Bon Appetit magazine. It seemed simple, yet delicious and that’s exactly what it was! If you haven’t yet discovered fennel I really encourage you to give it a try. It is certainly an odd looking vegetable, but once you start working with it, it is pretty straight forward.

Roasted Shallot-Sherry Vinaigrette

It should come as no surprise to anyone by now that I am a fan of homemade salad dressings. I made this for a family dinner some time ago and have been meaning to post it forever now. It was a delicious dressing that I ended up using on a spring salad. It would also be a great marinade or you can serve it warm as a sauce as well. It’s very versatile and easy to make.

REAL Tuna Noodle Casserole

Tuna noodle casserole is an American classic consisting of canned tuna, cream of mushroom soup, and sometimes green beans and other ingredients.  What made this REAL tuna noodle casserole was the use of grilled tuna steaks.  It still contained canned cream of mushroom soup and also green beans, garlic, and locally grown shiitake mushrooms from our CSA.

Spinach Stuffed Tilapia

Tilapia is always cheap when on sale or not.  Accordingly, it is not the tastiest fish but is very versatile and can be doctored up pretty easily.  This was a sauteed spinach stuffing rolled in tilapia filets that were then sprinkled with parmesan and panko before a quick bake.
