Christmas Pierogies

It has been a tradition for many years to make rogies on Christmas.  My mom has a recipe that has been passed down to her through family for years.  This is a typical eastern European/Pittsburgh dish that I wanted to fully learn and record.  It is a lot of work to make them if you make everything from scratch like we did but there are some corners that could be cut.  Either way, they are a great comfort and holiday food that can be eaten at anytime too.

Broiled Cod

I’ve always liked cod and this was a quick and easy preparation.  It was a good winter dish also.  Cod is not the cheapest cut, but is pretty reasonable and really tasty and flaky when cooked well.

Braised Country Ribs

This was a good indoor winter dish that sort of reminds me of summer a bit.  It was doable on a weekday in about 2 hours and well worth it.  The meat was soft and flavorful and didn’t need a lot of attention to make.

O Christmas Tree

Pork and Ginger Dumplings

We were making some finger foods for guests and while dumplings are not the typical “finger food”  they were a good munchie to have out.  We kept it pretty simple with pork, ginger, and green onion.  We tried a few different cooking types as can be seen above before deciding on the best.

White Bean Hummus with Roasted Garlic

I had some leftover great northern beans in my pantry from when I made the chicken chili. I have made hummus with edamame before, so why not make it with the white beans? I remember reading a post for white bean hummus on How Sweet It Is a while back and decided to check it out. Jessica’s addition of roasted garlic seemed brilliant so I followed her recipe. The only change I made was adding lemon juice at the end.
