Pork Chops with Romesco Sauce

We had pork chops on our menu the other night and I wanted to do something new to me and more exciting than my ole standby, shake n bake (which is still awesome). We had the ingredients for Romesco sauce, which I saw some other bloggers make here and here. I encouraged Greg to make it for us and he did. We enjoyed it a lot. So much so we made salad dressing with the leftover sauce, adding some plain yogurt and a little water the very next night. This was also very delicious!

Caprese with Lemon Basil Pesto

Oh, Summer… so sad to see it come to an end but luckily the produce from the summer crops are still going strong. We have been growing these lovely little tomatoes all summer and have been thoroughly enjoying them. One of our favorite ways to have them is with fresh basil and penn mac’s fresh mozzarella, extra virgin olive oil and balsamic vinegar. So simple, so good. Recently, we received some ‘lemon-basil’ in our CSA and naturally a pesto came to mind.

Roasted Chicken Enchiladas Suizas Stacked Casserole

Whew that title is a mouthful… a delicious mouthful at least! We received tomatillos two weeks in a row from our CSA and felt inspired to make some yummy green-sauce enchiladas. I searched the interwebs and found this recipe. I liked the idea of “suizas” or Swiss cheese flavored enchiladas and though I typically shy away from Rachael Ray recipes this one seemed pretty fun to make and rather unique. Not only did the flavor profile intrigue me but also the idea of a “stacked casserole”. The whole rolling up the enchiladas into cigar shaped tubes can be very messy and painstaking so why not skip it? I made a few modifications to her recipe both while making it and afterwards (link at the end of the post).

Chinese Style Shrimp in Garlic Sauce

There’s something fun and extra challenging about recreating favorite Chinese food takeout dishes at home. Maybe it’s the extra difficulty of trying to find and choose the ingredients from the shelves of the Asian market or maybe it’s because of the exotic nature of some of the ingredients. Either way the end result is great- Chinese food from your own kitchen. Yum!

Lemon Almond Chicken Salad

We had a coupon for a few dollars off any prepared food at Giant Eagle Market District and picked up some of their lemon almond chicken salad and I knew instantly upon eating it that I would soon be recreating it in my own kitchen. So here it is!

Roasted Shallot-Sherry Vinaigrette

It should come as no surprise to anyone by now that I am a fan of homemade salad dressings. I made this for a family dinner some time ago and have been meaning to post it forever now. It was a delicious dressing that I ended up using on a spring salad. It would also be a great marinade or you can serve it warm as a sauce as well. It’s very versatile and easy to make.

Tomato Vodka Sauce

When I was younger and my family would go out for Italian dinners I would often get the penne or rigatoni ala vodka (aka a tomato vodka cream sauce). For some reason I forgot all about my love for this sauce until I came across a recipe for it one day as I was reading blogs. Luckily, this sauce was super easy to make and just as decadent as I remember. We served it with sausage for some added protein and spaghetti squash instead of pasta. It was divine! I encourage you to try this, you won’t be disappointed.  Continue reading

No Tortilla Cheesy Chicken Enchilada Bake

What to do when you want chicken enchiladas but you don’t have any tortillas? Make this and you won’t even miss ’em! This is all the good stuff of the chicken enchiladas you know and love without all the needless filler of tortillas. You’re probably a little unsure right now about not using tortillas… which is very understandable.  I’m here to tell you that we really enjoyed this a lot and realized that the tortillas were never really that necessary after all.  Maybe you’ll agree.

Cheeseburger Soup

I once saw a Diners, Drive Ins and Dives episode that featured a place that made cheeseburger soup and I wanted to make it really badly. Something about it sounded so good to me, but time wore on and I kind of forgot about it. Recently, I saw that one the blogs I frequent featured their own recipe for cheeseburger soup and since the recipe was right there and all I decided to go for it… and I am so happy I did! I am still thinking about it and I made it quite a while ago 🙂

Turkish Chicken Thighs with Tahini Yogurt

Thanks to my sis we now receive Bon Appetit magazine! This recipe comes from the January 2011 issue. I adapted it in a couple of ways. First, I nixed the pomegranate relish that was supposed to accompany it and secondly, I used chicken thighs instead of making kebobs with breast meat.  Once it’s grilling season I would love to make this again, this time by making the kebobs. The thighs came out great though too!
