Crock Pot White Chicken Chili

On Halloween night we changed up our usual chili recipes and made a white chicken chili. It was a nice change and the recipe could not be easier.  I don’t have any pictures of the process because there really wasn’t one. All of the ingredients went into the crock pot and the rest took care of itself!

The recipe only took a little prep work and some can opening, but no cooking was required at all.

Ingredients included chicken breasts, onion, garlic, great northern beans, green chilis, oregano, cumin, cayenne, salt, chicken broth and water. I just threw it all in the crock pot, set it on low, and enjoyed the day!

The fun part was getting creative with the toppings, which you can really go crazy with or keep simple. A simple cheese topper with colby and Monterey jack…

or some creamy white cheddar…

Some avocado, tomato and serano pepper

and the works… above toppings plus sour cream and fresh cilantro…

I made a ton of this and it was great for days. Next time I might cut the chicken up a little smaller, but I don’t think I’d change much else at all. It was pretty perfect and did I mention how easy it was?

If you don’t have a crock pot, you could simmer it on low in a large stew pot as well. Hope you like this one!
