Spinach and Feta Stuffed Sage Pork Chops

I felt a bit like I was in a cooking rut and wanted to switch it up somehow.  We hadn’t had pork in a while and I found an inspiration for spinach and feta stuffed pork chops rubbed with fresh sage.

I got thick cut pork chops and sliced deep pockets in them.

 

They were about an inch think which was plenty big

For the filling I sauteed spinach and garlic in oil.  Once it was wilted, I removed it from heat and stirred in crumbled feta.  It was fresh bought from it’s brine and very soft, salty, and tasty.

Get to stuffing!

I was pondering baking them but decided to cook them on the stove top in a stainless steel pan.  I chopped up fresh sage mixed with pepper and garlic powder as a rub.

Once the pan was hot, I dusted the chops and sent them in.  I flipped them a good couple of times to make sure they were cooked through.  After about 5 minutes on each side, I cooked them for about another 5 a side while covered.

As a side, I reduced some bourbon and balsamic and sauteed green beans until they were soft.

  1. I love any meat stuffed 🙂 Especially when it’s stuffed with cheese! I made something similar once with chicken and it was awesome. Yours looks so beautiful!!
