Crispy Baked Haddock

Greg brought home some haddock, a flakey white fish, from Wholey’s and I took on the task of making it. In the past whenever I had fish at home I would call my sister for a recipe. She eventually grew tired of this routine and gave me a cookbook: America’s Favorite Fish Recipes from The Freshwater Angler. I finally opened it up and found a recipe for Crispy Baked Salmon, which I thought sounded (and looked) really tasty.

I can’t even remember the last time I prepared a recipe from a cookbook! I am so used to using the internet.

The crispy coating on the fish is comprised of several ingredients, including bread crumbs (which I reduced by about 1/4 to save some carbs) and ground blanched almonds, also known as almond flour.

Not the best picture here, but this is almond flour. You can probably find it in the natural foods section of your grocery store and if they don’t have it, Whole Foods or other organic markets should. I suppose you could also make it on your own by blanching almonds and sending them through the food processor.

I combined the bread crumbs and almond flour with melted butter, grated lemon peel, lemon juice, and salt and pepper.

It creates a crumbly but cohesive topping.

Next, I brushed the fish fillets with melted butter.

And patted on the topping.

Next, I sprinkled some almond slices evenly over the topping.

and placed the fish in a 375 degrees oven for about 10 minutes. At that point, I took it out and drizzled some melted butter over the fillets. Then cooked them for another 15 minutes and they were done. The fish was opaque, flaked easily and the topping was golden brown.

The coating was crispy and the fish was nice and soft. It had a great balance of flavors and textures and was pretty easy to make overall. Clearly, this recipe can be made with a diverse array of fish- the recipe I followed was for salmon and it still came out great with the haddock. I am sure it would be great with tilapia, cod, or any other flakey fish as well. The topping added some nice flavors but was not overpowering. All in all it was really delicious.We will definitely be making this again!
